Locust beans (popularly known as iru in Yoruba and DawaDawa in Hausa) are used to flavours African cuisine, especially traditional soups and stews. They have a strong distinct fermented scent, with a little going a long way. We have dried our locust beans to keep them fresh for longer. To use, simply pop them in hot water and allow them to rehydrate or put them directly into the food while you cook.
